My Starch Solution Experiment UPDATE (One Month Down!)

Hello everyone,

I cannot believe how fast time flies but I am just a little over 30 days of my 60 day experiment on the Starch Solution Diet. I thought I would give you a quick update. It will be short because honestly, not too much has changed.

What Have I Been Eating:

  • You guys know me well and know that I simply cannot give up my oatmeal. I basically eat the same meal every morning, although I did switch it up with some quinoa for a few days. My oatmeal is made with dates, flax/hemp seeds, banana, berries and a tiny bit of maple syrup (I know, maple syrup is processed but I just don’t want to live life without it!). I have increased how much oatmeal I am eating in the morning from 1/2 cup to a full cup.

  • Lunch consisted of potatoes, broccoli and cheese sauce, Sushi bowls, salads, sweet potatoes, casseroles or leftover veggie pizza.

  • Dinner was either quinoa pasta and veggies, potato nachos, stir fry’s, Sushi rolls, veggie pizza, chipotle bowls, or tofu wraps (I am eating tofu about once a week).

  • Snacks have been the hardest. They are normally just fruit or nice cream (frozen bananas and strawberries).

  • My plates have been split into 50% of the above and 50% veggies. The one exception is breakfast. I haven’t added veggies yet.

What Health Changes Have I Noticed in the Last 30 Days:

  • If you have read my previous blogs about why I started The Starch Solution, you know that I was partly trying it to get rid of this mysterious body odor that I was experiencing. After only a few days of eating more carbs and less protein, this odor went away. CONFESSION: I gave in one day during the last month and had a protein bar and protein shake on the same day. The body odor came back immediately but has been gone ever since.

  • I haven’t had any changes in hair growth…..yet. I am still hoping.

  • My energy has remained high (which is saying a lot considering all of these sleepless nights with a puppy!).

  • My weight has essentially not changed. Although my clothes feel great, the scale only goes up or down by 1-2 pounds.

  • I used to have swollen ankles once in awhile and that has disappeared.

  • I am still looking forward to eating. Food feels fun!!! I have to admit that we went on vacation for a few days in August and I may have gone overboard with the “starch”. After years of avoiding them, I coudln’t get enough bagels and veggie pizza.


Any Downfalls to Eating This Way:

The only downfall to this way of eating is the amount of cleanup that needs to be done after meals. I feel like I am constantly cleaning and living in my kitchen. I am sure that this would change with a little meal prep. Also, I have been extremely hungry the last few afternoons. I cannot seem to eat enough. And I do miss the convenience of simply grabbing a protein shake or smoothie.

What Changes Do I Plan on Incorporating in my Next 30 Days?

  • Lately, I have been exploring the idea of low calorie dense foods. I want to start switching high calorie foods out for lower calorie ones to see if I can get my weight to shift at all (for example, blueberries instead of dates).

  • I plan on being better about meal prepping so that I don’t spend hours on end in the kitchen everyday.

  • I need to find more foods to snack on or to eat larger meals so that I am not ravenous during the middle of the day.


Overall, it has been a really fun experience and my body feels so much better. I cannot wait to see what the next 30 days brings and I look forward to conquering this way of eating even more.
