My Starch Solution Experiment (Week 1)

I cannot believe that it has already been a week since I talked to you last….which means that it has already been ONE WEEK of my 60 day Starch Solution Experiment. Time flies when you are having fun :)
I will try to keep these updates quick, since I will be posting them quite often, and I know that you have better things to do. So, let’s jump right into it!
What Did I Eat This Week:
Since I am a creature of habit, I ate the same thing for breakfast every morning. Oatmeal with dates, bananas, berries, hemp and flax seeds, a little maple syrup and a green tea.
Lunch consisted of sweet or white potatoes, a large side of cooked/raw non-starchy vegetables, or leftover veggie pizza.
Dinner was either a veggie stir fry, potatoes and broccoli, veggie pizza, quinoa pasta and veggies, or Sushi rolls. We did have one cheat night with our favorite Beyond Tacos.
Snacks consisted of fruit or rice cakes (with a little peanut butter).
My plates were split into half of the above and half non-strachy vegetables (except for breakfast. I am having a hard time eating veggies in the morning).
I did not have any smoothies, protein powder or tofu (see my previous blog to find out why I am not eating those items).
What Health Changes Have I Noticed in One Week of Eating This Way:
If you read my previous blog post, you know that one of the reasons I was trying this diet was to eliminate the weird (and awful!) body odor that I was experiencing. I have to say that within a few days of adding more carbs back into my life, the odor has completely DISAPPEARED!!!
Another huge benefit is that my blood sugar has stabilized. I didn’t even realize that it was unstable! But after a week of eating this way, I am not experiencing the fatigue or headaches after eating. My head feels completely clear and I am not starving all of the time.
The stress of figuring out what to eat has vanished! I look forward to eating now and it’s so simple. I know that every meal will include a starch and a veggie. So easy….and completely guilt free.
Let’s discuss my energy: whoah! It has been sky high! So much so that I may have to increase my workouts. It is truly amazing!
WHAT ABOUT MY WEIGHT??? DID I GAIN WEIGHT WITH THE ADDED CARBS?!
I have to admit that this is the one thing that I feared about trying this diet. And……..
My weight stayed essentially the same. No real fluctuation whatsoever (I lost 0.2 pounds).
Note: I know that a lot of people have had huge success with weight loss on this diet but I was already eating a low-fat, whole food plant based diet. Instead of taking something away, I simply added more carbs. And I didn’t gain weight?! I am thrilled!
Any CONS of Eating This Way:
So far, the only downfall of eating this way is that my kitchen never seems to stay clean. I feel like I am constantly washing, chopping and cooking. However, this isn’t much different than the way it was on a whole food plant based diet. I have done some meal prepping for this upcoming week and am excited to see if that will make a difference.
Alright friends, that is it! Quick and to the point. Honestly, I am loving eating this way and look forward to seeing what happens from here.
