One of the questions that I get asked everyday is, “What do you eat?” So, I made a quick and honest video that shows exactly that: What I Eat in a Day (Plant Based, Vegan, Gluten Free). I hope that you will watch this short video and realize how easy it can be to make delicious and nutritious food. Please remember that it doesn’t have to be complicated.
Just a quick note that the volume on this video is a little bit wonky, so make sure to turn it up when it gets to lunch time.
I realized today that Thanksgiving is only two weeks away!!! Ahhhhh!!! Time sure does fly.
For some of us, the holidays can be an extremely difficult time. We are surrounded by animal suffering and it is thrown in our faces in the grocery store, on tv and at holiday meals (happy turkey anyone?!).
I am hoping that today’s video will make the holidays a bit less overwhelming. It is important to take care of our mental well-being so I have come up with a few approaches to help us do just that.

I hope you are doing well. I am so sorry that it has been so long. Somehow the month of April got away from me, but I am back!!!
Two quick things:

I have struggled with being vegan for almost my whole life and it wasn’t until this last year that I was able to stick with it 100%. Don’t get me wrong, eating a vegan diet can be so easy!! However, I kept making the same mistakes over and over again that hindered my progress as a vegan.
